Vegetarian Curry Recipe

I'm often asked for a Vegetarian Curry Recipe. In reality curries don't come any simpler than these.

Aloo Gobi
A delicious potatoes and cauliflower curry that will serve 3-4.

1 medium onion, finely chopped
1 garlic, finely sliced
2 large potatoes, cut up into 1 inch cubes
1 small cauliflower, separated into small florets
½ teaspoon cumin powder
½ teaspoon turmeric
1 green chilli, finely chopped
2 tablespoons tomato paste
½ teaspoon salt

Fry the onion and garlic in a little oil in a heavy pan. Remove from the heat and add the spices and green chilli. Gently fry until the oil is separated from the mixture. Add half a pint of water and the rest of the ingredients, except the cauliflower. Stir and boil over a high heat for 6 minutes. Stir again, add more water and/ or salt as necessary and put in the cauliflower. Cook over a medium heat until both the potato and cauliflower are cooked through.
Mixed Vegetables, Restaurant Style
This is roughly how curries are made in Indian restaurants. First of all, steam or boil the vegetables you want to include in your curry. Traditional ingredients include potatoes, carrots, cauliflower and peas. (If you're using frozen peas you can add them at the end).

Then make your sauce:1 large onion, chopped
2 garlic cloves, sliced
1 inch (2.5 cms) peeled garlic root, finely chopped
1 green chilli, finely chopped
½ tin (225 gms) chopped tomatoes
1 teaspoon tomato puree
½ teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon hot red chilli powder (or more or less, to taste)

Fry the onions, garlic, ginger and green chilli, with a little salt, in a large pan. When the onions become transparent, add the ground spices and cook until the oil separates. Take off the heat. Put in a blender with all the other ingredients and half a pint of cold water and blend.
Return the ingredients to your pan and cook until the mixture has reduced to the correct consistency. Add the vegetables and heat through. Adjust the seasoning as required.
